If you are interested in learning how grapes are turned into wine, Koi Zen Cellars will be offering a two part class during August. Each class is about 90 minutes long. Aug 12 part 1 and Aug 26 part 2

If you are interested in learning how grapes are turned into wine, Koi Zen Cellars will be offering a two part class during August. Each class is about 90 minutes long.

 

We will talk about the entire process along with all of the equipment and explain how it works. This basic winemaking class is ideal for someone who wants to make a batch at home or wants to participate as part of the Crush Crew. We will also discuss in detail many of the tools and equipment you would need to make wine at home.

 

During the first class we will talk about:

  • The maturation process of grapes and when to pick.
  • Basic measurements of sugar, pH and acids.
  • Sanitization and staying clean.
  • How to prepare the grapes for fermentation including destemming methods.
  • Yeasts, nutrients and the fermentation process.
  • How to manage primary fermentation and what to watch out for.
  • How secondary fermentation changes the wine.
  • Pressing and extracting the wine.

During the second class we will talk about:

  • Wine aging.
  • Oaking and flavoring of wine.
  • Monitoring the aging process and what to watch out for.
  • Racking and clarifying the wine.
  • Preparing for bottling and the bottling process.
  • Wine aging and storage considerations.
